In plain yogurt does the info in the nutrition facts panel represent nutrition before or after fermentation?
I'm curious if the information, specifically the sugar data, on the nutrition facts panel is the information collected before the fermentation process or after when it is completed. This would be for the plain(no fruit), fat-free, no sugars added variety. Using as a model a 6 oz cup, the data is explained as 13 grams of carbohydrates, with 12 grams of them as sugars. I know that the lactobacillus used in producing typical yogurt consume the lactose.I read a source written about yogurt and low carbohydrate diets and this article stated that the level of sugar is about 6-8 grams per cup(did not state if whether "cup" indicated 8 oz or a 6 oz serving size cup) when purchased chilled and that the live cultures are still slowly fermenting. Also it stated if left to warm it would continue fermenting until the total sugar is about 5.5 grams due to the lactic acid concentration. Is this information I have stated correct?
